Ciro Salvo

Ciro Salvo is a third-generation Neapolitan pizzaiolo, born in Naples in 1977. Trained in his family’s pizzeria in Portici, he has devoted his career to researching dough since 1996, developing a highly hydrated, light and easily digestible pizza that has helped redefine the standards of contemporary Neapolitan pizza. In 2014, he opened 50 Kalò in Naples, in Piazza Sannazaro, followed by the opening of 50 Kalò London in 2018, in Trafalgar Square, and 50 Kalò Roma in 2022. In 2024, he expanded his Naples operation with a second location in Piazza della Repubblica. His pizzerias have consistently received recognition from leading international guides: three Gambero Rosso “Spicchi” since 2014, inclusion in the Michelin Guide since 2017, and regular placements in the 50 Top Pizza World and Europe rankings. He is an ambassador for Neapolitan pizza around the world for Slow Food, and in 2026 he received the Forbes Origine Award for redefining quality standards in contemporary pizza.
