Jonathan Poole

Jonathan Poole is a restaurateur and Owner/Director with over 30 years of experience creating, developing and operating successful restaurant businesses. He began his hospitality career in 1993 and opened Chez Jules in Chester in 1996. In 1999, he created the Ego Mediterranean concept, growing the business to six restaurants before its sale to a venture-capital-backed buyer. In the early 2000s, he was also part of the consortium that acquired the national Pierre Victoire restaurant chain from receivership, gaining experience across both independent and national restaurant operations. Over his career, Jonathan has created, owned and operated 14 standalone restaurants across nine different concepts, taking businesses from initial idea and positioning through to opening, growth and established operation.
